Ingredients
Method
Take chicken and either cut with a large knife or poultry shears down the middle of the backbone.
Open the chicken out and place on a shallow tray skin side upwards.
Make 6 slashes on the flesh 1 in each thigh and 4 across the breasts
Mix all the ingredients in a bowl.
Spread the Butter on the skin working the mixture into the slashes for flavour
Leave to marinade for at least an hour then cook on 170°C Fan for 70 minutes basting regularly
Ensure product is piping hot and juices run clear
