Indian Style Chicken Soup

Chicken Serves 4

In collaboration with AHDB and British Muslim TV,  Shazans are taking you on another food adventure like no other! We’ll have incredible recipes to inspire your Ramadan, showcasing the use of British chicken, lamb, beef, dairy and cereals and special guests from within the Halal industry. Watch daily during Ramadan across all our social channels!

Ingredients 

  • 500g of cooked shredded chicken breast
  • 1 tablespoon vegetable oil
  • 1 large onion finely chopped
  • 120g of Balti paste, for a more intense heat use madras paste
  • 2 litres of chicken stock
  • 400g can chopped tomatoes
  • 400g Sweet potatoes peeled and cut into 1cm diced
  • 400g can chickpeas rinsed and drained
  • Small bunch of chopped coriander leaves

Method

Heat the oil in a suitably sized saucepan on medium heat
Add onion and sweat off without colour
Add the sweet potato and cook for a couple of minutes
Take off the heat and add the curry paste and stir
Place back on the heat and add the tomatoes followed by the stock
Bring to simmering point then when the sweet potato softens add the shredded chicken
Followed by the chickpeas and coriander

Serving suggestion

Serve with crusty bread.
